When we think of “hospital food,” we might think something along the lines of: Mushy with a side of jiggly neon. Not the best, right? But at the Frank R. Howard Memorial Hospital in Willits, California, they’re changing what it means to serve high quality food to not only patients, but also the community.

“Hospital food doesn’t have to be the old standard of low, low quality, bland food,” says Kyle Evans, the executive chef and director of nutritional services. “It should be vibrant and expressive.”

Utilizing the 5-acre organic garden that supplies fresh veggies for the hospital and Roots—the restaurant on campus—Evans joined the Frank R. Howard Memorial team in hopes of applying his distinguished fine-dining culinary expertise to grow a more robust culture of healthy eating inside and outside the hospital walls.

“We’re serving not only the patients, but to the communities around us,” says Evans. “And that’s the hope of Roots—for a place to gather and share community.”
